Counter notes

A cafe seating mix that holds up from the 7 AM rush to the 2 PM lull

In this guide

At 7:40 AM, three laptops hold three tables, a family of four stands by the pickup shelf with their cups, and the line reaches the door. Nobody did anything wrong. The shop just owns the wrong mix of seats.

A cafe seating mix is the split between stools, two-tops and four-tops, and it should come from your own mornings, not from a catalog page. Count the parties, turn the count into tables, then check the tables against the floor. One sheet of paper and a week of mornings will do it.

Three horizontal cards show a cafe seating mix: six stools at the window ledge, six two-tops with 12 seats and two four-tops with 8 seats. A dark side panel totals 14 parties, 23 guests and 26 seats on a 320 square foot floor.
One place per party: six stools, six two-tops and two four-tops seat 23 guests with three seats spare.

Count parties, not people

Keep a pencil by the register. For a week, make one mark for every party that sits down: a tick in the "1" column for a guest alone, in the "2" column for a pair, and so on up. Circle the busiest half hour of each day. That half hour is the one you're furnishing for, and the 2 PM lull can look as empty as it likes.

Parties matter more than head count because a cafe seats parties. A guest alone with a laptop takes a whole table, whether the table is built for two or four. Six solo guests at six four-tops means six people in 24 seats, and the line behind them has nowhere to sit.

Give Saturday its own sheet. A weekday tally and a weekend tally can look nothing alike, and one mix rarely serves both.

From the tally to the table count

Say your busiest half hour shows 14 parties in the room at once: eight guests alone, four pairs, one group of three and one group of four. That's 23 people.

Give every party a place of its own. Six of the solo guests take stools at the window ledge. The other two solos and the four pairs take two-tops, which makes six of those. The three and the four take a four-top each. The mix comes to 6 stools, 6 two-tops and 2 four-tops, or 6 + 12 + 8 = 26 seats for 23 people. The three empty seats are slack, and a room with slack feels calm.

Now test it against the floor. Counter-service cafes plan on 11 to 14 square feet per seat, so dividing an example 320-square-foot dining area by 12 gives about 26.7. That is an early area allowance to investigate, not a demonstrated layout for 26 seats. Check the tables, occupied chairs, and routes on the measured floor before accepting the count. Your occupancy limit comes before either number, and your architect or designer checks it. The guide to furniture by venue type lists the per-seat ranges for other kinds of rooms.

Stools take the solos

A guest alone is the easiest party to place. A stool at the window ledge needs 24 inches of rail, so a 12-foot ledge, which is 144 inches, seats six. Pair a 42-inch ledge with stools of 29 to 31 inches and knees get the 10 to 12 inches they want.

Check whether a chosen backless stool fits beneath the ledge by measuring its underside and supports. Keep the queue clear when the stools are occupied as well. The bar stool collection runs both backless and backed, and the guide to backless versus backed bar stools helps you split the ledge between them.

Twos that turn into fours

Two 30-inch squares pushed side by side make a 30 by 60 table, longer than the 30 by 48 that seats four. A row of two-tops is therefore a row of fours on call, after checking matching heights, stable support, the seam, knee room, and occupied fit. A laminate dining table lists sizes from a 24-inch round to a 30 by 60 rectangle, so one family of tables can fill the room. The coffee shop tables page shows the other materials.

The costly mistake is buying fours because four seats sounds flexible. A 36-inch four-top is 9 square feet of tabletop. A 24 by 30 two-top is 5. Put one laptop on each and the four-top holds the same guest on nearly twice the table. Flexibility belongs to the pair of tables you can slide together, not to a table stuck at four. The guide to coffee shop tables for laptop use goes further on sizes for a guest with a bag and a mouse.

For Saturday overflow, keep a couple of folding metal tables with a base in the back room. The listed weight is 30 pounds. Top choices are a 30-inch square or a round of the same diameter, and the listed use includes both indoors and patio.

Chairs come after the tables

Once the tables are fixed, pick the chair. Check how the closing team will move each chair using its handling instructions. Compare weight and outside width alongside comfort and the intended appearance. A metal ladder-back chair stands 32 inches tall on a 17 by 20 inch footprint and weighs 18 pounds. The restaurant chair buying guide goes through how to judge a chair before you commit, and the stacking chair page lets you compare models that specify stacking.

Where each piece lives

Put stools at the glass, two-tops through the middle and the fours at the back, where a group can settle without blocking the queue. If the shop has a sidewalk, count those seats on a separate line and buy patio pieces for them. Keep indoor chairs inside: wood frames swell on the sidewalk, upholstery fades, steel rusts, and the warranty leaves that exposure out.

The cafe collection gathers tables, chairs and booths in one place. A booth is the one piece that skips the 8-piece minimum on tables and chairs, which makes it a fair choice for a back corner that stays put. The day-to-night furniture guide covers what changes when the same room turns into a dinner room.

What to tape on the floor this week

Take the 26-seat sketch and tape it on your own floor before you order a thing. Mark a 12-foot ledge in 24-inch steps. Mark six rectangles of 24 by 30 inches and two squares of 36. Then walk the queue from the door to the pickup shelf, with a borrowed stroller if a friend has one. If the line has to turn sideways to get past a table, move the table.

When the tape survives the walk, save the selections in Cafe plans. Label the window seating separately from the counter area and rear tables. The samples page sends upholstery swatches and table top material samples at no charge, by UPS Ground, with 2 to 3 business days on the road. A person reads each order before we confirm it, so a note about your tally can ride along.
